Anima Mundi 'Gres' Xarello Penedès Spain (Natural) 2023

Anima Mundi is a new project from the AT Roca winery, an attempt to recover some ancestral techniques of the Alt Penedès. 'Gres' is 100% Xarel.lo, taken from vines between 50 and 60 years old. Its vinification is split in three: part ferments in old 500L barrels, another in clay amphoras, and the third part on skins in stainless steel. Six mos' of age given to each, then all are blended together afterward. Round, lightly orange, and very textural, this wine highlights Xarel.lo's native pithy note.
